I seriously can not cook. But, I can heat and assemble pretty well. I was digging thru my grocery store shelves, and found these corn tortillas - serving size 2 - 80 calories, and 15 carbs -- perfect.
I took some already cooked Jimmy Dean Sausage crumbles (found at Target), lightly heated in skillet and set aside. Scrambled 2 eggs (you can use egg substitute), added some cheese, and good old Pace Picante Sauce (hey the classics are back), and yum. On diet, and yummy, one pan fast.
