Baked Layered Nachos -- Diabetic and Diet Friendly

Nachos are a personal favorite of mine.  This quick and easy recipe can be made both Diet and Diabetic Friendly.
 
This is a use what you have, and use your imagination recipe.
 
It borders on a baked layered dip, but is more of a Nacho.
 
First, assemble your ingredients.
 
I use anything and everything:  Beans, Chicken, Beef, Pork, anything left over.
I used 1 can of Pinto Beans, drain the top of the water in the can off (you can add more water later if needed).  Put in bottom of square Pyrex and smash with a fork.
 
If you like Taco Seasoning etc, you can just sprinkle right on top.  I like mine plain.
 

Next, add chicken, beef, pork.  I like the Trader Joe's already cooked Chicken Breasts.  2 Breasts cut up and placed on beans.  Next sprinkle with cheese and green chili.  You could also use queso, if you prefered, that would be yummy.  I always use green chili.

Put in 350 degree oven and heat until nice and hot.  Remeber to use precooked ingredients so you are just heating.


Top with quacamole, tomatoes, lettuce, jalapenos.  Whatever you like.  Then get your chips and dig in.

Quick note here--the Nacho Cheese Doritos are amazing with this (not diet friendly).  What you see on my side is simply, corn tortillas, baked in an oven at 400 degrees until crisp (those are more diet friendly).

Best part of this dish, it uses your left overs and you can customize it for your diet.  Oh, and you can just eat with a fork, no tortillas required.  Don't forget the salsa.
Football season is coming up.  This can also be made and scooped into taco shells.
